Description
To create Desi Ghee Patisa, a dough is prepared by kneading flour, ghee, and a small amount of water. The dough is then rolled out into thin layers and stacked on top of one another, with a sprinkling of ghee and sugar between each layer. This layered dough is then folded and rolled again, resulting in a multi-layered structure.
Following this, the rolled dough is carefully cut into square or diamond-shaped pieces, referred to as patisas or soan papdis. These pieces are allowed to set until they achieve the desired consistency. Once set, the individual patisas are separated and served. The end result is a sweet with a unique flaky and delicate texture, which crumbles effortlessly and dissolves on the tongue.
Desi Ghee Patisa is often flavored with cardamom powder, which imparts a delightful aroma and enhances the overall taste. It is commonly enjoyed as a festive treat during special occasions and celebrations throughout India.
The combination of the rich and aromatic flavor of desi ghee, the light and flaky texture, and the sweetness of sugar makes Desi Ghee Patisa a truly delightful and indulgent sweet. It is a cherished part of Indian cuisine, celebrated for its exceptional texture and the traditional flavors it embodies.
