Description
To make Desi Ghee Motichur Laddu, besan batter is prepared by mixing besan with water to form a smooth and thick consistency. This batter is then passed through a special sieve with small holes, called a “jhara,” directly into hot desi ghee. The tiny droplets of besan batter fall into the ghee and get fried until they turn crisp and golden. These fried besan droplets are known as “boondi.”
Once the boondi is fried, it is drained and then soaked in a sugar syrup flavored with cardamom and saffron. This allows the boondi to absorb the sweetness and become moist and flavorful. The soaked boondi is then carefully shaped into small round laddus by gently pressing and rolling them between the palms of the hands.
